Our Philosophy

“ADAPTABILITY INSIDE AND OUTSIDE OF THE KITCHEN” is what we’re known for – malleability, adaptability and the ability to build international flavours with local ingredients. We partner with local farmers, growers and suppliers (in Wellington County) who provide us with locally grown products throughout the year.

Our menus are seasonal and rotates at least 4 times a year, both to minimize the environmental impact of global supply chain, and to allow our customers to experience new tastes and flavours. Education and exposure to the best of our Canadian food, changing with the seasons, is at the root of eating better and THAT is at the root of better physical and mental health.

Governance

To deliver on our mission, we need to abide by the highest ethical standards while building strong foundations for our business. Mentorship and collaboration are at the core of our success.

Environment

As a culinary social enter- prise, we have an important role to play in improving the environmental impact of the food service industry. We have built our own circular food system to reduce our footprint and maximise our positive impact on the world around us.
